The crackling sound of the firewood was soothing to my ears. Types of soba "Inaka Soba" and "Nukisoba" without the shell I like warm thick inaka soba noodles My partner is cold country soba noodles. After all, it is best to enjoy the taste and aroma of soba when it is cold. I had warm soba because it was cold, but it was also delicious. I was very satisfied with the chewy noodles. (*^ω^*)

I received the two colors of Kakiage Seiro (cold). Nishikimori is an assortment of half buckwheat noodles made by removing the shells and milling them into flour, and half buckwheat noodles made from "inaka (hosouchi)". I arrived around 3pm on a weekday. Perhaps because of the time, there were no customers before or after. It was a calm space in an old private house, and it seemed like time was passing slowly. We were given a seat at the horigotatsu. Nishiki Mori's Inaka is very thin and I think it is easy to eat even for people who are not good at Inaka. For those who love the countryside, there is also a ``taiuchi'' where you can eat only five meals a day. The soba noodles with sharp edges are perfectly cooked and slightly firm. The soba soup had a simple taste, and I felt it had a slightly stronger flavor than the soup stock. The kakiage was mainly onions with a little shrimp and carrot, and the friedness was just right, so much so that I wanted to eat another one. I felt like I had a luxurious time, including the atmosphere of the shop. Please note that there is no parking lot, so you will have to park on the street. Parking instructions are posted on the front door of the store, so be sure to follow them carefully.

A soba restaurant located quietly in a residential area run by an elderly couple. Is the soba noodles made with whole fruit? There are two types of soba: white soba, and inaka soba (thin and thick) with all the shells ground, and you can also order two types of cold soba noodles. The calm space made me feel like I had come back to a relative's house in the countryside, and it was a gentle space where I didn't feel the frustration of waiting at all. The owner probably learned how to make soba on his own, and there isn't much on the menu, including only one type of tempura soba. I ordered two colors of Kashiwashiro. What I'm really happy about is that they provide not only Kashiwa's noodle soup but also regular mori soba noodle soup. The soup stock was made very well, and the lunch was full of delicious soba noodles from a hidden soba restaurant.
