Seems fatty but quite light and tasty with very smooth straight noodles are perfect, sliced roasted pork is also rather chewy and delicious, even a bowl of rice is good. I visited around 11:40 just after opening on a holiday. The parking lot was already almost full, but there were two people waiting inside, so we were seated within about 20 minutes. This time, I ordered ``Chinese soba with backfat sardines'' for 830 yen, ``Chicken soup'' for 850 yen, half egg topping for 50 yen, and fried chicken small plate for 350 yen. It seems that the owner once managed a ramen shop in another prefecture and won first place in Tabelog. The dried sardines don't have a very rich taste, and if you drink the soup alone, you will feel a bit of a strong salty taste, but the richness of the back fat and the dried sardines soup go very well with the thin noodles. The chashu is also soft and delicious. The chicken paitan is rich and rich, but it is a creamy soup with concentrated chicken flavor that has almost no chicken odor. I really like the noodles because they are firm and chewy. It comes with two half-flavored eggs and two thick slices of pork belly. The soup for Gattsuri Niboshi is similar to that of back fat Niboshi, with a light soy sauce flavored with Niboshi. The thick, square noodles made with whole grain flour have a chewy texture that goes well with crunchy vegetables. Although it has a lot of back fat, it is easier to eat than it looks. The soup is sweet and has a light flavor, so if you're expecting a Jiro-style dish, it might not be what you expected. The char siu is still delicious. The char siu rice bowl is topped with chunks of grilled pork and has plenty of volume. The gyoza skins and fillings look like they are handmade, and are half-moon shaped. The skin is chewy and the filling is so juicy that if you're not careful, the juices will come out the moment you bite into it. It was a restaurant with a good reputation, and I thought it would definitely be delicious just by looking at the photos, and it was just as I expected. This is a restaurant where you can try all kinds of food.
