The owner is said to be the eighth and last disciple (Note 1) of Hirohito Hoshi, the owner of the famous Kirinji restaurant. The store is located just 5 minutes away by car from Mendo Senkei, which is in the same chain. We arrived at 11:20 and there were 5 people waiting. By the way, there were 10 people waiting when I left. It's extremely popular even on weekdays. Write your name on the waiting list and wait in the waiting area. The restaurant has 7 counter seats and 10 tatami seats in front of the spacious kitchen. There are three people: the young shop owner and his wife + the female customer service. There are three types on the menu: ``Aged soy sauce soba'' and ``Scallop salt soba'' made with fresh water, and ``Tori soba'' made with rich chicken broth. After about 20 minutes, I was shown to my seat and ordered the special soy sauce soba. The bowl appears in about 5 minutes. The soup is a mizudori soup made with only chicken and water. The rich flavor of the soy sauce balances the flavor of the chicken, making it delicious. A large amount of chicken oil further accelerates the flavor. It's a common water chicken type, but this one has a special flavor. Using ingredients such as carefully selected free-range chicken bones from all over the country, Nagoya Cochin bones, and maple leaves, they aim to create a soup with a richer broth than Kirinji. For the soy sauce sauce, they use ``Gen,'' a re-brewed soy sauce that has been selected by Michelin-listed restaurants, as well as soy sauce from the local ``Marusho Jozo'' (Matsumoto City). The noodles are thin straight noodles from Sakai Seimen (Nagano City). Boiled to a slightly soft texture. The noodles are crisp and the noodles taste good. Toppings are chashu pork, seasoned egg, menma, yuzu peel, and green onion. The default pork shoulder loin, chicken breast, and chicken thigh. Beef, duck, and pork shoulder loin on separate plates. Each dish is a masterpiece where you can definitely feel the flavor of the meat. I was especially surprised at how fluffy the chicken breasts were. The flavored egg is the aggressive type with a loose yolk. The egg taste is strong and very delicious. The menma is also crunchy and has a good flavor. The quality of the toppings is also high. This time, since it was my first visit, I ordered a limited amount of white chicken soup "Ajitama chicken soba" 1,150 yen + "Meat rice with Japanese beef" 650 yen. Noodles are "Sakai Seimen"'s crispy medium thin noodles. The soup is a rich and flavorful soup with condensed chicken flavor. The moment I took my first sip of the soup (Ugh!) I felt like I was about to say it out loud. I heard that the owner had become independent from "Mendo Kirinji", so I had high hopes and raised the hurdles, but the deliciousness surpassed it. Especially for those who like white chicken soup, I think it's an addictive taste that can't be tasted at other stores. “Kinjishi” is a restaurant that was renovated from a yakitori restaurant. It's small, but I think it's lively, bright, and clean. The main store layout is a 7-seat counter, and there are 2 small tables for 4 people, but I think the target customer base is a small group of adults. Payment is cash only. Also, the waiting space in the store will be quite dense. There are noisy people who are talking all the time and people who are coughing, so I think it's better to wear a mask for self-defense. (Second post) This is my second visit. When I visited at 12:20 on weekdays, there were 9 people waiting inside the store without waiting outside. This time, after filling in my name at the reception, I sat down on a chair in the waiting area and waited. I was guided to my seat at 12:50, waiting for about 30 minutes. This time, I ordered Chinese soba "Ajitama soy sauce soba" 1,100 yen. The soup is a unique and tasteful soup that condenses the taste of chicken. The toppings such as char siu are also well cooked, and like the chicken soba I ate last time, I think that the “soy sauce soba” has a high degree of perfection and is very delicious. This is my third visit. When I visited at 12:45 on weekdays, there were 11 people waiting inside the store without waiting outside. Again, fill in your name at the reception desk and wait for your turn at the waiting seat. I was guided to my seat at 13:15, waiting for about 30 minutes. This time, I ordered the Chinese soba "Ajitama Shio Soba" for 1,100 yen. The soup has a sense of transparency, but it is a soup that feels clear and has a deep taste. It blends well with the crispy noodles and you can slurp it with just the right amount of seasoning. Even on weekdays, there is always a line, but I think it's well worth the wait. It's expected to be even more crowded when it's introduced on TV, but the number of customers is good, so I don't think you'll have to wait that long to eat. The taste of any base is delicious, but I personally recommend "Chicken Soba" and "Soy Sauce Soba" with chicken white water. If you like lightness, I think "salt soba" is good.
*The photo shows well-grilled meat. Usually rare. I went on a weekday around 7:30pm. There were about 4 groups waiting. We were shown to our seats in about 30 minutes. I had the special soy sauce soba! After completing my order, the staff member noticed that I was pregnant and asked if I would like the meat to be grilled very well. (It seems the store owner noticed and gave instructions to the staff.) I was very grateful for this care during my pregnancy, and my husband and I were very impressed ✨ (The boiled egg was runny, so if you're pregnant, it might be best not to eat it.) The taste was delicious and the customer service was great, so I will come back again (◍ ´꒳` ◍)
