Aizuwakamatsu, Fukushima, Japan｜Ramen Mattari

AMAZING ramen! The flavor was very complex and well developed! The char siu was tender and flavorful. The server was friendly, helpful, and very attentive. The seating area is a good size with chairs and tables as well as traditional seating. I will definitely be back it was so good!

This is soy sauce ramen with back fat. I don't usually add back fat, but looking at the reviews, it seemed like a lot of people were ordering the ``Mattari Ramen'' series that includes back fat, so I decided to use the Mattari Chashu noodles with back fat. It takes a while for the soup to come out, but once you take a sip of the soup, the wait time disappears. The backfat goes well with the soup and noodles, which is similar to Kitakata ramen! ️I think garlic is also effective. And it's not boring. And the chashu was soft and had a lot of flavor, and even though it stuck in my teeth, I wanted to eat more. The first bite of the gyoza tasted like natto, but maybe my taste buds are crazy? But the gyoza with wings are delicious 😊 If I'm in the area again, I'd like to stop by and eat there. It seems like it's over when the soup runs out, so try to get there early.
