This restaurant specializes in creamy rich pork bone ramen, but I was curious about the kelp water tsukemen, so I ordered it. The kelp water that the noodles are soaked in has a strong flavor and is delicious as is, or you can eat it with a little seasoning (salt, wasabi, ginger) added to the noodles. The thin noodles looked like soba noodles, and they were more filling than I expected. The dipping sauce has a strong soy sauce flavor, and I would have liked more soup to drink it down, but it would have been better if it had been diluted with kelp water. I ordered the Shinmei set, so after I finished eating the noodles, I poured the kelp water over the rice with wasabi and mixed it with a little dipping sauce to enjoy it like an ochazuke. I would like to try the tonkotsu ramen next time.
