When I was living in Kisarazu a long time ago (about 20 years ago), a person who used to frequent Hayashiya is now in the kitchen. The soup is lightly flavored and has a low viscosity, but the umami has a strong punch of soy sauce, chicken, and pork. Recently, other families have expanded significantly in the Kazusa area, but I personally like the taste of this store.

It's better to be honest than to talk about details. The flavor of the pork bones and the sharpness of the Miya soy sauce are the best. If you're in good shape, you can use normal fat (ordinary and a little too much), but personally, less is just right. The noodles are chewy, so if you make them hard, you can enjoy a crisp texture until the end. It was a dish that I wanted to visit regularly!

I've been there dozens of times since I was in high school. I've eaten some other Iekei ramen, but Kimitsu's Nishiyama is so delicious. There's nowhere else but here. The owner, an old man, is also a rugged guy who has the feel of THE ramen shop, which I like. It's hot enough to kill me in the summer, so I want you to take care of your body. The char siu has changed, and the noodles have changed to smoother ones, and then back again (the noodles have a slightly matte texture that goes well with the soup), but the taste has remained the same for several years since I started going there. I'll give it to you. I recommend it because it goes really well with white rice. The strong flavor is quite strong, so I recommend the normal one. The spinach is crunchy and delicious. Toppings are recommended. But the most recommended topping is green onions. For 100 yen (as of 2022), it comes topped with crunchy green onions tossed well with sesame oil. The good thing about it is that it's not cut into thin strips like so-called white onions, and it doesn't get stuck in your teeth. A large serving usually has a large amount, so if you are expecting a large serving of regular ramen, I think a medium serving is fine. I'm always in the middle. I know it's a shame to say this, but the taste is very different from the Nishiyamaya store in Kisarazu, and the one in Kimitsu is definitely better. The atmosphere of the soup is the same, but Kimitsu has a more aggressive touch and is more exciting to eat. However, you won't feel super tired after eating it (imagine that feeling at Hayashiya), and the moment you finish it, it's a ramen that will make you feel so good that you'll want to eat Nishiyama! The parking lot is small and it's a little far from the station, so access is difficult, but it's a ramen that you should definitely try at least once, so I'll write a review about it even though it's been a few years.
