It is said that the skill of the chef can be seen by the peperoncino, and the peperoncino here is exquisite. Even after making peperoncino myself and researching various ways to make it, such as emulsification, I just can't get it to taste like this. When I tried the cream pasta with forest mushrooms and porcini, I heard that they used frozen porcini and abalone mushrooms. I had only eaten dried porcini before, so I was surprised at how good the aroma was. Even when I traveled to Italy, the home of Italy, I don't think I ever found a restaurant where the food was as delicious as this one. In Japan, there are many restaurants that have a lot of pasta. In Italy, all pastas don't have a lot of ingredients, and the Amatriciana is just tomatoes, cheese, and bacon, so it's kind of unsatisfactory. I would like it to have plenty of onions, but to Italians this seems like a bad idea. I personally like Japanese pasta with lots of ingredients, and I personally think this Italian restaurant is better than Italy.
