The Minokamo store no longer uses the Shinkansen to transport sushi, which made it very inconvenient, but when I went to the Kani store for the first time in a while, I was impressed to see that the Shinkansen was still in use and transporting sushi was so speedy. The miso soup was brought right away and the service was quick! When I went to Kappa Sushi in Ueda City, Nagano Prefecture when I was young, I loved the quaint system where the plates were placed on a sushi bucket floating in water, and the bucket was washed away by running water. Back then, sushi had twice as much sushi as today's sushi, and the portions were good.
