The sweetness of the soup and the salty taste of the kaeshi are well-balanced, and the oil is mixed in in the middle. It was a satisfying amount with 2 pieces of pork. The inside of the store was clean and there was no tension that is typical of Jiro, so it was comfortable. Are the husband and staff members of your family? I think it has a great atmosphere and is recommended for beginners. However, there is no list of toppings, so you need to check in advance (this is true at all stores). Ramen Jiro is something I would like to come back to even if I am a beginner. It was a feast.
Since I'm a Jiro type, I was prepared to line up and visited after 12:00. But there were actually empty seats, so I got in easily. There is a parking lot nearby that costs 100 yen per hour, so use that. The order is Yasai Sukuname Abra. I thought the good thing about Jiro-style food was that it took a long time to eat, but it was served quickly, but I'm glad that it's served quickly here as well. At first glance, you can only see one piece of chashu, but there are three pieces in total underneath the vegetables. I've only eaten at Jiro Honke's Aizuwakamatsu branch, as I'm not a Jiro one, but it's also delicious. The difference from Jiro restaurants is that the meat is chewy in places. It wasn't hard because it was well-cooked, but the more I chewed, the more I could taste the meat and oil, which I liked. Honestly, I think it's a little-known spot because there aren't many people around, probably because it's in a shopping district. I think I'll go eat there next time. At that time, I think I'll order it with garlic oil.

Last time I visited for the first time, I had less noodles, but this time I ordered Kobuta Ramen (just noodles) for ¥930. The topping is less vegetables and garlic. The noodles are crispy, the soup is sweet, and the pork has a lot of flavor, so it's definitely delicious! I could have just left the vegetables alone (lol) Actually, when I eat Jiro-style ramen, I try my best (not absolutely) to add garlic to the toppings. ...But it tasted better with garlic 😆 From now on, I'll use garlic as much as possible.
