Sano, Tochigi, Japan｜Moritaya Higashi

Thickest and best charshu in my time in japan (8 years so far). It’s like roast pork broth with more roast pork on top, add that to the amazing noodles that are made by hand and irregular so they take in more flavour, you have my favourite style of ramen in japan at my favourite restaurant.

I came here after climbing Mt. You can see Mt. Sambo from the store's parking lot. Speaking of Moritaya, it is a long-established Chinese soba restaurant, and both the ``Chinese soba'' and ``Sano ramen'' on the menu have the same noodles and soup, but the ingredients are different. The standard of Sano ramen is that the noodles are uneven in thickness and width.Old Sano ramen was not chewy and jiggly like wontons, which was also delicious, but this one has a light chewiness and the uneven noodles are chewy. It's a well-balanced and delicious ramen with a nice accent.
