The flat noodles are thin, and the thick noodles are about the size of regular medium-thick noodles. Chinese noodles are made with the fat removed and made lighter. In fall and winter, it's even better with yuzu on it. The photo shows thick noodles with dried backfat sardines and warm vegetables. Addition: Abura soba is a thick noodle, perfect for when you just want to eat simple noodles.
I had the backfat sardine ramen and salt ramen. The inside of the store is clean and the staff are very friendly. It was lively. For the Niboshi Ramen, you could choose the thickness of the noodles. I had the flat noodles, and the texture was very good. Salt ramen is recommended for those who like elegant dishes.
Homemade flat curly noodles that are rare around here! We recommend Tsukemen, which allows you to understand the taste of the noodles. Although it is called back fat, it has a light texture, so even those who don't like back fat will enjoy it.
