I ended up ordering the beef tendon set. Char siu is a topping. The beef tendon arrived first. It has a slightly sweet seasoning and tastes like miso or soy sauce. The streaks are well processed and soft. Chuka soba is truly the classic Chinese soba. The scent of chicken oil in the chicken broth soup. Brightly colored Kujo green onions. I thought it was Kyoto-style ramen, but it turns out it was inspired by a restaurant called Tenjin in Okayama. It was my first time eating ramen in Okayama, and it was a pretty good restaurant.
