Very big bowl and testy
[A long-established restaurant serving thin noodles with pork bone soy sauce and cutlet soba that represent Okayama ramen] One of Okayama's oldest establishments, with table and tatami seating. In a narrow alley near the station, two long-established Okayama ramen establishments, Asatsuki, which leans more toward richness, and Fujiya, which leans toward tanrei, are located opposite each other. Hokancho is truly ``Okayama Ramen Street.'' I entered the store at 10:30 right after it opened. I ordered cutlet soba. I visited this store for the first time in several decades, but I felt nostalgic as the store was exactly as I remembered it from my childhood. Yes, at that time I was sitting in the very back room. Katsu soba consists of thin straight noodles, dark pork bone soy sauce, chashu pork, green onions, and lean pork cutlet with fine breadcrumbs. Thin straight noodles with a rich soup is quite unusual, but it suits my taste. The pork cutlet is low in fat and lightly breaded, and goes very well with the pork bone and soy sauce soup. Just like tempura with tempura sauce, it is also good to eat tonkatsu with pork bone soy sauce. A famous restaurant may not only have a physical taste, but also something that continues to support the nostalgia and memories of local people. Thank you for the meal.
