I got the nori bonito tsukemen. The seaweed and dried bonito toppings add flavor and umami to the dipping sauce, and the green onions have a nice texture. Noodles that have been thoroughly soaked in water are hard and have a smooth surface that you won't find anywhere else. I love this noodle from Mr. Shinbe. The dipping soup is more delicious than the spiciness, and it is 30 times more delicious. I like to eat this dipping soup with plenty of sesame on top. It's a very delicious tsukemen.

It's been so long since I've eaten that I don't even remember how to order or eat, but the staff explained things to me in detail and I was able to order smoothly. Today I had the ❝classic tsukemen (regular ¥850, 10 times the spiciness). When you think of Hiroshima tsukemen, you might think of them as being sour and spicy, but the dipping sauce here has a strong dashi flavor and is not sour. To be honest, it's delicious (^^) The noodles have a unique firmness and are firm and chewy. Cabbage and green onions go well together, and when eaten together, the pickling sauce mixes well. There is a spicy pot and vinegar on the table, and if you don't have enough spiciness or sourness, you can customize it to your taste. By the way, 10x spiciness wasn't that exciting.
