This shop has a line of people at noon. I don't know the details, but it seems to be a category inspired by "Ramen Jiro", and it is all managed by the owner alone at the counter. I ordered ramen with vegetable mashi, garlic mashi, abura mashi, and karame. The noodles were thick and there was quite a lot, so my stomach became full. !(^^)! The char siu looks delicious, but it is rather dry and thickly cut, making it difficult to eat with the noodles. The soup was rich and crispy, but I worked hard and got it all. －－－－－－－－－－－－－－－－－－－ This time I entered the store around 6:30pm on a weekday. There were no customers, and I said, "I'm lucky that it's empty!" I thought, but it was almost full by the time I got home. (๑°⌓°๑) Ramen has gone up in price since last time. (°o°) It can't be helped in this day and age. ( > <.) I ordered ramen with vegetables, garlic, and abura. The texture of the noodles is chewy and the contrast with the crunchy texture of the bean sprouts is very enjoyable. As I continued to eat it, the chashu began to fall apart, and by the time I ate it, I couldn't make out its original shape. I think it probably has an elegant taste among the Jiro types. When I observed the shopkeeper's work closely, I was very impressed with how carefully each job was done, and how he often washed his hands before moving on to the next job. I've been ordering homemade spicy shrimp often, so I think I'll try it next time.
