This is a restaurant I've been interested in for a while because it has a high reputation in Shiga Prefecture. It seems that there are many rules unique to each store, and there are pros and cons. I left home before 7am because they said they were open from morning. On the way, I was stranded for 30 minutes at Kyoto Station due to train trouble. About 15 minutes from the nearest station, Kawase Station. You won't get lost as you can get there just by following the zigzag path. Somehow I arrived at the store at 9:30. There are some store rules posted in front of the store that you must read. Once you have finished reading the book, go inside the store, use the ticket vending machine to find your pre-determined menu, and purchase your ticket. Is that the name of the ramen? That's what it feels like. Soy sauce soba emotion. 1100 yen. There is no particular guidance from the store. Take a seat at the counter. The ticket is like an iPad in your hand, so you can read the menu without having to give it to the staff. The staff consists of one male and one female. The person who appears to be the store owner is a man in his late 30s to early 40s. He wears glasses and has sharp eyes. It feels crazy. The ramen that arrived at my door had a wonderful aroma that stimulated my appetite. An elegant soup that combines chicken stock and Japanese stock. I think this Chinese soba noodles, with its chewy texture, is a high-quality bowl that can compete even in the fiercely competitive area of ​​Osaka. There are 3 pieces of char siu, but all 3 pieces have different parts and seasonings, so you slurp the noodles, chew them, add the soup, chew and swallow them together, then chew the char siu, add the soup, and eat them all together. Even if you keep eating it, the pattern of the chashu changes, so you can enjoy the different tastes of each. I've decided to return to this restaurant because I can feel the owner's taste and careful preparation.
