More Comments at Google MapThis is a restaurant I've been interested in for a while because it has a high reputation in Shiga Prefecture. It seems that there are many rules unique to each store, and there are pros and cons. I left home before 7am because they said they were open from morning. On the way, I was stranded for 30 minutes at Kyoto Station due to train trouble. About 15 minutes from the nearest station, Kawase Station. You won't get lost as you can get there just by following the zigzag path. Somehow I arrived at the store at 9:30. There are some store rules posted in front of the store that you must read. Once you have finished reading the book, go inside the store, use the ticket vending machine to find your pre-determined menu, and purchase your ticket. Is that the name of the ramen? That's what it feels like. Soy sauce soba emotion. 1100 yen. There is no particular guidance from the store. Take a seat at the counter. The ticket is like an iPad in your hand, so you can read the menu without having to give it to the staff. The staff consists of one male and one female. The person who appears to be the store owner is a man in his late 30s to early 40s. He wears glasses and has sharp eyes. It feels crazy. I could feel his passion for making ramen with precision as he stared at the timer, timing the noodles. They took great care in draining the noodles, and it seems like they are faithful to the basics of their business. Served in 6 minutes. The ramen that arrived at my door had a wonderful aroma that stimulated my appetite. An elegant soup that combines chicken stock and Japanese stock. It takes advantage of the elegant soup with a subtle soy sauce taste. The seasoning is modest, and the soup has a perfect balance of being neither heavy nor light. The noodles are straight, flat noodles with whole grain flour. Boil the noodles so that they remain slightly chewy in the center. I measured it accurately with a timer, so I got the message that you should eat it with this texture. There are two large pieces of chashu. It's thick, meaty and delicious. Excuse me, but the elegant and delicate ramen made by a cool-looking man is so out of proportion that it leaves a lasting impression on me. Maybe it's because I just ate the ramen in a bland manner, but I didn't have any particular concerns about the customer service. As soon as I entered the store, he would ask me to come in in an appropriate tone, and I would smile at people who seemed to be regulars. Even though it's a rule, it's not a ridiculous rule. If it were nearby, I would like to go there as many times as possible.
This will be my first visit. I had previously heard from a friend that there is a delicious ramen shop in Shiga, but there are a lot of detailed rules, so if you don't prepare before going, you'll be warned. First of all, I would like to comment because the clerk's response was very polite and I was able to enjoy the ramen normally (in a good way). I didn't really understand the restaurant's system, but there is a waiting ticket issuing machine inside the store, so even if there is a line when you come to the store, you need to be careful because if you don't access the issuing machine, you won't be able to eat even if you wait forever. . Since it was my first time, I ordered the default Chinese noodles (1,100 yen), but since the rice was the last one, out of consideration for my companions, I ordered only the Chinese noodles without any additional orders. The first thing I noticed when I tried the bowl was that it was ``beautiful Chinese noodles.'' It's a cup that is reminiscent of pure Japanese cuisine, where the appearance is part of the deliciousness. The soup is based on soy sauce, but it's not too strong, so you can taste the light flavor. The soup is delicious, with just the right amount of flavor from the chicken bones and pork bones (or pork belly?), and the chewy, medium-thick straight noodles. I think this Chinese soba noodles, with its chewy texture, is a high-quality bowl that can compete even in the fiercely competitive area of Osaka. There are 3 pieces of char siu, but all 3 pieces have different parts and seasonings, so you slurp the noodles, chew them, add the soup, chew and swallow them together, then chew the char siu, add the soup, and eat them all together. Even if you keep eating it, the pattern of the chashu changes, so you can enjoy the different tastes of each. I've decided to return to this restaurant because I can feel the owner's taste and careful preparation.
Gennotsuki finally arrived I couldn't come because it seemed complicated. When I parked the car and read the warning on the sign, it was a bad place, so I moved immediately. I downloaded air wait and it wasn't crowded even if I didn't do anything, so I went straight to the store🙌 I don't know about the ticket vending machine, it's a weekday limited menu Choose from three types: Chinese noodles, emotion, Akatsuki, and amber. Leftmost Chinese noodles Emotion 1000 yen It looks like chicken soy sauce and I'm excited Noodle strings are beautiful 🙌 After taking a sip of soup Seriously delicious? 🙄 Anything other than chicken in there? 🤔 Totally ignorant 🤣 It smells good too 🙆 I also like slightly hard noodles Char siu is also ( ゚ Д ゚) Uma Thank you for the meal 🙏
