It's been a while since I last visited my favorite Marufat Sohonten. A long-established Chinese soba restaurant in Gifu City that was founded in 1919. The appearance and name are a bit strange, but I've loved the Chinese noodles here since I was young, so I'm excited to see Marufat for the first time in a while. The menu only has Chinese noodles and wontons. The reason why there are so many elderly customers is not only because it is a long-established restaurant, but also because of the super light soup that is served in a small bowl full of leftovers. It's a simple soup that you won't get tired of even if you eat it every day, but it's a unique soup. The small pieces of chashu have just a little bit of oil floating on top of them, so it's more like udon noodles than healthy. If you like strong flavors, it's a good idea to say in advance that you want it spicy or dark. If you are a foodie, you may be able to accomplish the feat of ordering two bowls of Chinese noodles with the second being spicy, or ordering two bowls of Chinese noodles and wontons with a small bowl. I always have spicy Chinese food and wontons. Although it was a holiday, the restaurant was fully booked as soon as it opened.
