Kasamatsu, Gifu, Japan｜Sanjo

Outstanding ramen!! The soup wasn't too rich or overpowering, a very well balanced and not too salty broth. I had the extra chashu and it was as good as the picture I'd seen initially that made me hunt this unassuming little spot down. Also had the Niniku chahan (garlic fried rice) with whole bulbs of beautifully roasted garlic in it!! It's not a huge shop, only seating around 15 or so customers, so it does fill quickly and you may have to wait, but we were lucky. The staff were very quick to take our order and have food in front of us within 5 min. Do yourself a favour, if you're in the area!

Number of people waiting for photos at 12:30 on 10/14. I wrote my name inside the store and waited for 30 minutes (the counter is quick if you're alone), but I added the charred garlic topping and completely crushed the garlic fried rice! The thin fried rice covers the noodles. You can gulp it down. Next time I will try a large bowl of ramen without fried rice!
