I go there every week. It's really delicious here! Even if you don't like soy sauce, you can eat here. No matter when you go, you'll never get tired of this flavor, and you'll be addicted to it. Adding a little bit of ramen vinegar to the soup gives it a sour taste and makes it much easier to eat. (This is a recommended method because you can eat a little bit of the soup and noodles in the lotus root and add a little bit of ramen vinegar to keep the flavor intact.) The taste of chicken oil is also strong. The soup stock from the ingredients is strong and has a great depth of flavor. It's interesting to see how the taste changes when you compare the noodles when they're hot and when they're slightly warmed up. The smoked char siu is also thick, very tender, and has a strong flavor, which goes well with the ramen. It's easy to eat because it's not oily. I don't usually eat smoked meat because I don't like it, but the chashu here is really easy to eat and delicious, so I recommend it. The Char Siu Mabushidon is served with a little mayonnaise on the rice and garlic, and it's delicious! I want you to try it when you go. It's irresistible for garlic lovers. I think it's fair to say that this ramen is delicious even among the other Iekei ramen at Diata. I often see people lining up, but I think the turnover rate is very fast compared to other ramen shops. I think it's proof that the staff is very attentive, as they quickly clean up the dishes and call the next person as soon as the customer leaves. (At other shops, it is common for people to leave their seats for more than 15 minutes. Some places are slow to serve customers even though they are empty.) I also make the ramen by myself, so the taste never changes drastically every time I go, so I can eat with confidence. (You don't have to worry about the taste changing too much due to part-time work or help.) If you want to eat authentic family-style food in Gifu, we recommend Inabaya. The hot days continue, but thank you for always providing delicious ramen despite these difficult times. I would like to come again.

It's super delicious. Beautiful chicken oil, crisp Kaeshi, and the main ingredient, pork bone soup. Everything is good, the noodles are delicious too. The soup is layered, and the taste changes depending on how deep you scoop the soup, so you won't get bored. I don't think you can find ramen that is so well-made.

It was the busiest ramen shop I've ever been to. I came here on the recommendation of a friend. If you make it more flavorful, it will taste a bit salty. It's salty. Please try it with normal flavor for the first time. When I put my bag directly on the floor, The staff gave me a basket. It might be a good idea to apply if you need it. The taste is perfect, and the average ramen is cheap at ¥800. For those who want a large portion, choose the medium size (large size as other restaurants call it). It's +100 yen, but it's still cheap... The texture of the fat was fine and it was sparkling. More than 90% of the customers were young people!
