I had vegetable ramen with tonkotsu soy sauce and half chan. Both were very tasty. As everyone has written, the ramen is very voluminous. The bean sprouts are crunchy and taste even better. There were so many bean sprouts that it was hard to get to the noodles. (^^) It had a large piece of meat and was soft and tasty. The fried rice also contained finely chopped meat and was delicious. Women may not be able to eat this much, but I finished it all. It was a little painful. The staff was very nice and the restaurant made me want to eat there again if I was in the area.

It seems to be a famous restaurant from Nagoya that has moved to the north of Gifu City, right in front of Yamagata City, and I'm not really a fan of the tonkotsu ramen...but I had high expectations for my visit as the char-han (half-chan) was highly rated (lol). The restaurant is run by only a couple, so I was worried that the service would be slow as per the reviews, but...the cooking and customer service were courteous and speedy, so there were no problems at all! (A 34-year career is not just for fun.) I ordered a tonkotsu vegetable ramen and a half set of char. The ramen that was served first was loaded with lots of bean sprouts and vegetables! Low-hydration thin noodles with a light tonkotsu soup. Even though it's a bean sprout similar to Jiro's, it has a strong taste and is fragrant and stir-fried and delicious! ! I could eat it till the end without getting bored. To give you an easy-to-understand analogy, it's like tonkotsu bean sprout soup topped with noodles. The bean sprouts are the main character rather than the noodles (lol) The noodles are cheap to say the least, but the bean sprouts stand out. If it wasn't vegetable ramen, it would be unsatisfying. The fried rice is also exquisite, with the perfect amount of stir-fry and crunchy texture. (Personally, I don't have much to say about it if you add the flavor.) This is the first time I've had fried rice of this quality at a ramen restaurant, and I was impressed. Even though it was only half of the set, it was a decent amount and I was very satisfied. I was hungry with the bean sprouts and fried rice, but it was a light soup, so I finished it off with a single bite! If you come here, you should eat vegetable ramen and half a cup of cha (lol)

The deliciousness of the ramen has remained the same since the time it was served at Irinaka in Nagoya. The fried rice is exceptionally delicious. The business is run by a husband and wife who love motorcycles. Ramen while talking about bikes is the best. Once you stop by, you'll want to come back again, so seeing is believing. Please enjoy it for yourself.
