Gifu Tanmen has become established as a local noodle dish, and it's a popular shop where there's always a line of people waiting. This time, we added more vegetables and meat to the standard tanmen noodles, and added garlic and spiciness (1 spiciness) to increase the punch! The noodles topped with Chinese cabbage and pork belly have a seasoning that goes well with the rice as well as the noodles. For those who are concerned about calories and sugar content, you can also choose konjac noodles for an additional 50 yen. I thought konnyaku noodles were bland, but the slightly wavy, flat-style noodles go perfectly with the soup and are very satisfying. They also have fishmeal toppings, so you can create your own Gifu tanmen. The bean sprouts on the table are free, and you can add them to the noodles, or I personally recommend putting them on a small plate and tossing them with vinegar, kaeshi, chili oil, and garlic to your taste to make a chopstick rest. Currently, the store structure is mainly in Gifu and Aichi, but I would like to see them expand into the Kanto region as well!

The soup is quite different from the Kanto tanmen. In addition to the umami of the vegetables, the soup has a punch of garlic and is exquisite. There are relatively few vegetable toppings, so adding more vegetables is a must. You can choose from 6 levels of spiciness. If you come to Gifu, please try it.
