The cloudy soup, neither clear nor white, has a complex flavor that is harmonious. It can be said that while the original design structure is placed in Takayama Chinese Soba, it has been localized to be accepted by the local people with a free mind. The flavor is not overpowering, and the texture of the noodles is also good, giving it a modern feel. The egg-cooked rice is perfect, and the way it's cooked to a fluffy, glossy texture is irresistible.
