Visited for the first time for lunch on a weekday in early May. There is a parking lot for 3 cars behind the store. Please note that it is not very spacious. I waited a while outside and was seated. It wasn't as smelly as the current mainstream tonkotsu ramen, but it was a salted pork bone soup with a strong flavor. For the substitute, choose ``straight noodles.'' This was crunchy and I really liked it. Thank you for your meal, I will visit you again!

I ate it for the first time in probably 10 years. that? Tastier than I remember! It has a refreshing and salty taste, and you won't get tired of it until the end. Complete with soup. The store also has old wrestling-related goods that the owner likes. I'll ask next time.

From the north exit of Nishi-Hachioji Station, exit onto Koshu Kaido (Route 20), turn left without crossing the road, and walk along the sidewalk until you reach the Namikicho intersection. It's quite a walk if you walk. If you take the Koshu Kaido road toward Takao, you will pass the store and enter the taxiway immediately (to the right of the store), and there will be a parking lot in the back. There is a 5cm step from the sidewalk, but I think it is possible to get over it even in a wheelchair. Inside the store, there are only "L-shaped" counter seats, there are no ticket machines, and the menu is posted on the wall to the left of the entrance (behind the L-shaped counter seats). I received the "Salt Tonkotsu Ramen (average)" (800 yen). There are only two types of ramen on the menu: ``Salt Tonkotsu Ramen'' and ``Salt Tonkotsu Charshu Men'' (1,000 yen), each of which costs 100 yen more for a large serving. Other items include rice, drinks, toppings, etc. When you take a sip of the slightly yellowish soup, you will notice that it has a light and soft tonkotsu flavor and plenty of minerals, and the mellow salty taste without any harshness will gently permeate your stomach. The fat is extracted by squeezing the backfat that has been simmered to remove excess fat, giving it a rich flavor without any unpleasant tastes. The thin straight noodles are coated in this mellow soup, but have a sweetness from the wheat that offsets the salty taste, and fill your mouth with the flavor of tonkotsu that rises as you chew. The finely-grained chashu pork is just like chicken breast, and even though the excess fat has been boiled out, it's juicier than it looks, and the more you bite into it, the more you can taste the flavor of the pork, and the saltiness and flavor of the tonkotsu soup. The flavors deepen as they fuse together, and in the end, only the original flavor of the pork flows down your throat. Once you've enjoyed the flavor of the salted tonkotsu while also enjoying the flavor of the green onion and the texture of the bean sprouts, add white pepper, a tabletop seasoning, to give the soup a sharp edge, and pickled ginger to add a refreshing spiciness and sourness. Enjoy the different flavors, and enjoy the soup one last time to your heart's content. (You may also want to add white sesame seeds.) (*This is just my personal opinion.)
