This agodashi (flying fish) ramen changed my life. I will forever reference events before and after this bowl as it was a turning point in my existence on this planet.

(2023/08) We use "Hingya Salt" from Aogashima, which is famous for its mysterious umami flavor, so we have salt ramen here so you can get a sense of its taste. The Agodashi soup stock has a rich flavor of flying fish, but there is no unnecessary bitterness or unpleasant taste. The soup stock is made with great care. Hingya salt is added to this, adding depth to the flavor. Although the soup is not salty, it is very satisfying. The combination of dashi soup and salt is perfect. The noodles are slightly thick and curly, so even when you're slurping the noodles, you can always feel the flavor of the soup. It's strong ramen. Asa (green lettuce) is a rare topping for ramen. This is the perfect seafood ramen!
