The tanmen I ordered (limited to 10 servings today from 660 yen to 550 yen) had a lot of toppings, and the soup was salty, but had an exquisite taste that was a bit like soy sauce and blended with the flavor of the vegetables. The thin, homemade noodles are perfectly cooked by default, and go perfectly with the soup. Gomoku agesoba (900 yen) is also quite a large portion. However, the soy sauce-based filling is delicious on its own, and it's also delicious when mixed with the crispy noodles. What surprised me was the fried liver vegetables. I was imagining something with a stronger flavor and a chewy texture, but The liver retains the crunchiness of the vegetables, but has no odor and cooks just right. I think the seasoning is surprisingly light, but the umami ingredients in the seasoning really emphasize its individuality. There was also a nice service that included two slices of freshly cut oranges and candy for dessert.
