This time, I went to "Ginza Ishii Gotanda Branch", which is about a 5-minute walk from Gotanda Station. Order the special Chinese bamboo steamer here! It's Tsukemen. The Hinai chicken, one of Japan's three most rare local chickens, is simmered with over 20 carefully selected seasonal ingredients for more than 10 hours every day, and the soup has a deep and rich flavor. The noodles have been improved with Mikawaya Seimen, and are smooth and chewy. Not only was the soup rich and delicious, but the noodles had a smooth and chewy texture that was just amazing. The surface is smooth, so rather than soaking into the soup, for some reason it just lifts up together, and although they go well together, It was a tsukemen that you could clearly understand and enjoy each flavor.
