Visit again around 4pm on weekdays I was worried about the ordering mistake last time, but this time I was relieved because they showed me their meal ticket normally. I was thinking of making the noodles really hard as mentioned in other reviews, but since the noodles were being cooked by a young person rather than the usual chef, I ordered them with the normal hard noodles. Although it was a classic family-style soup, it had a gamey feel to it, and the noodles weren't always soft, making it a very high-quality bowl. Also, I think there were times when I had free time, but after the ramen was served, the young chef handed me chopsticks and spoons (normally, I took the ones from the table), and there were some small things. The problem is the ordering method, which is reminiscent of the old Rokkakuya main store. A young clerk called me after holding my meal ticket, but I thought it was dangerous and I was sure it would be okay, but as expected, I made a mistake. As humans, we can't help but make mistakes, but I can't accept that even though I pointed it out and signaled my understanding, it wasn't corrected. I guess it's probably full of orders. I thought it was a newcomer, but when I looked at past reviews, I saw a post about a similar mistake about half a year ago. The master made it exactly as ordered, so it was probably an issue with the person in charge of ordering. I thought it would be better to use the standard format where you place your food ticket at the counter and take your order. It would be a shame to lower the rating because of something like this, even though they are making delicious ramen.
☆ONOMICHI☆ This is a popular Rokkakuya sister store. I came here once last month, but it just happened to be a summer holiday... So revenge. This is my first visit in about 2 years. There is a strong smell of pork bones even outside the store. I haven't heard much of Totsuka's Rokkakuya lately, so it's been a while since I've seen this. Ramen 650 yen. Extra seaweed for 100 yen. Today I asked for a hard and dark one. The price has not increased even in this day and age. Customers come in constantly. In the kitchen, there are three large and two medium-sized torsos. It's cooking a lot and it smells pretty good, but it's a little exciting. Sakai's noodles are boiled in a medium-sized bowl and drained in a flat colander. Rather than putting the loosened noodles into the sundou, Add the noodles while loosening them on the pan. Since it was a batch for 6 people, there was a difference of about 1 minute in the boiling time between the first and last part lol. The same young person as last time was making ramen. In a sense, it's good to be about things like this. The visual of the seaweed covering gives a sense of genealogy. Soup is a balanced type. I used a lot of oil today, so a thick layer is formed. The scent of chicken oil is nice, but it leaves your mouth feeling slimy. When you take a sip of the smooth soup, a strong animal sensation leaves your nose. Today's dish had a strong pork bone flavor and a strong soup stock. Even though there is a lot of chicken oil, the flavor remains and it has a nice aftertaste. The flavor is also strong, so if you mix it well, the soy sauce flavor will come out well. However, the texture is mellow and slightly salty, not sharp. The balance between the pork bone flavor and the added chicken oil and soy sauce was really good. This one is light among Rokkaku family genealogies, but today's one was a home run. And after all, it's this beast feeling. I feel like it wouldn't be Rokkakuya without this. It reminded me of the good times at Rokkaku Bridge. Sakai's medium-thick noodles are short noodles from the Rokkaku family. As expected, even though I ordered it hard, it was served soft lol It wasn't chewy, but it was chewy and went perfectly with the soup. If the Sakai noodles used by Musashiya and others are soft, they will turn out to be crumbly. This noodle doesn't have that, and it's delicious even though it's soft. It's smooth and has a good texture. The pork shoulder roast is small. The meat part is a little tough. The fatty part is juicy. Almost no seasoning. But it goes well with this soup. Spinach has a lot of flavor. I'm completely exhausted. Although the flavor is weak, it mixes well with plenty of chicken oil and becomes a nice rest for your chopsticks. There are 7 sheets of seaweed. Larger pieces of seaweed with a slightly lighter color will be stronger even when soaked in soup. It's thick and has a firm texture. The flavor was ok. The green onions used as a condiment are chopped in advance, so they don't stand out. You can really feel the "uniqueness" of it. The exciting atmosphere and smell are great while you wait. Even if there is a lot of oil, There are a lot of them by default, so it would be best to have a strong flavor here. It's a classic family ramen. I hope it stays the same forever.
