After being guided by a staff member, we entered the restaurant, purchased a meal ticket from the ticket vending machine next to the entrance, and then sat down. Inside the store, there is only an L-shaped counter with about 10 seats. The menu has a variety of items such as salt ramen, soy sauce ramen, tandan noodles, and tsukemen. This time I ordered soy sauce special ramen and small rice. The soup was delicious with chicken and seafood. The seafood is said to be kelp and knotweed. It was a mix of the flavor of the chicken and the flavor of the seafood stock, which was not made with chemical seasonings. It matched well with the homemade thin noodles. The char siu topping was cut into thick pieces, making it filling, but still melty and delicious. Wonton, menma, and green onion Kujo also do a great job. The boiled eggs were also delicious. It doesn't have a strange punch because it's unbalanced, but the overall taste was gentle and well-balanced. It has a very sophisticated feel, so it's no wonder it was selected as a Michelin Pub Gourmand.
I was curious about it, but it wasn't open at any time, so I finally got to visit it for the first time today. I went right after the store opened at 11:00, and although there wasn't a line, the counter seats were almost full soon after I entered. I had the special soy sauce ramen. Traditional Chinese soba with homemade medium-thin straight noodles matched with a soup made with bonito stock and soy sauce, and plenty of toppings such as two sheets of seaweed, menma, chashu, seasoned eggs, and wontons. The green onion in the center is a bright accent that whets the appetite. The chashu is thickly sliced and melty, and the wonton has a smooth skin that wraps plenty of ingredients, giving it a satisfying texture. I combined the soft-boiled flavored egg with seaweed and menma, and had it alternately with noodles and soup.It was quite filling, but I finished it and drank it all in no time. Next time I would like to try the salt and chashu rice bowl. Thank you for the meal.
It was a shop I wanted to visit once. I got the soy sauce ramen. The thin, straight noodles are covered in soup and become smooth and slippery, with a slight scent of dried sardines, so delicious that it's a complete meal! !
