I went back to Tokorozawa for the first time in a while because I had some business to do. I was surprised to see a notice saying, "The soup has been changed from rich to light," but I was relieved that even though the soup had changed, the Umetaro taste remained the same. Previously, Pig in Pig with Pig! That's what it felt like, but the reborn ramen is pork in pork with salt ☆. There's plenty of fat that makes you question whether it's "light", minced meat that sinks to the bottom, exquisite chashu, and a strong salty taste. This ramen will energize your tired body. But the aftertaste is definitely lighter than before. It goes well with rice, so I always go with half rice and half noodles. Rice is a must. It's so light that I can eat all of it...? That's what I thought, but I decided to make it half-noodles and it was just right 😂
