If there is a line outside, you can just stand in line, but if there is no line, you can go inside and buy your meal ticket inside. After about 25 minutes, I was guided by a store clerk. Special soy sauce ramen (1580 yen) Pork rice (400 yen) If you purchase one and give it to the person in charge, it will be exchanged for a number tag. You can get your own water at an empty seat, sit down and wait, and within about 5 minutes your number will be called and you will go get it. It's only the third day of opening, so things are likely to change in the future. The inside of the restaurant is quite spacious, with 16 counter seats and 12 two-person tables. The reason we had to wait outside was simply due to kitchen operations, and the restaurant was only about half seated. I don't think we can keep up with the capacity because there are so many seats in the store. The soup was a well-balanced orthodox type with a soup stock similar to that of four-leaf leaves. The noodles were flat, straight, water-added noodles with a soft texture that went down smoothly. This one had a different taste from the four-leaf and dark green. This is Ramen Hana Moegi, the third branch of Saitama Prefecture's very popular restaurant, Chuka Soba Yotsuba. There is a private parking lot in front of the store. This is a new store opening in October 2023. I arrived at the store at 12:00 on Friday and there were 6 people in line. Get in line right away without buying a ticket. The restaurant has table seats and counter seats. After purchasing a meal ticket, hand it to the clerk and receive a ticket with a number written on it. It's styled like a food court, where you go get your ramen when your number is called. This time, I ordered the soy sauce ramen. The soup has a strong animal-based flavor, with the chicken flavor being the main flavor. The three types of char siu have quite a bit of fat, except for the chicken char siu, so your taste may differ. This is the only affiliated restaurant that serves salt ramen.
The third branch of the popular ramen shop Yotsuba. The visuals etc. are similar to Shinmori-san in the second store. While Mr. Shinmoku focused on the soup, this one gave the impression that he focused on the soy sauce sauce, and I could taste the sharpness and bitterness of the soy sauce. There is also salt ramen, but if you want to enjoy the flavor of the soup, salt is better. If you are used to the taste of Yotsuba-san or Dark Midori-san, it will lack freshness, and if you are not used to it, you will feel that the price is high. Personally, I really liked it. I'm looking forward to seeing menu items other than soy sauce and salt.
