It was delicious. There are quite a few Jiro restaurants where the flavor of their tonkotsu soy sauce is not fixed. The food here is delicious. The noodles were flat, but they were delicious even if they weren't crunchy, which I thought was a good thing. While many vegetables only contain bean sprouts, they also contain a lot of cabbage, making them easy to eat. I wanted to come again. I arrived a little after 12:00 on a Wednesday, but there was no line and I was seated right away. There were two staff members, both women, so I was able to relax and eat without feeling intimidated by the Jiro style.
