Otsu, Shiga, Japan｜麺匠 眞

It was my first time visiting with my girlfriend. I was worried because it was hard to tell from a distance if it was open from the outside, but when I got closer I was relieved to see a sign saying it was open. When I entered the store, I was greeted kindly by the friendly owner and led to the counter. About 6 seats at the counter? It is a small and cozy restaurant with only one table for two people. I ordered rich tandan noodles, chicken paitan ramen, and rice, but it seems like they don't have rice today... Instead, the owner recommended that ``Chicken paitan noodles are thin noodles and the quantity is small, so if you want to make a large serving, chicken paitan would be better'', so we decided on a large serving of rich dandan noodles and chicken paitan ramen! It was delivered quickly and was very delicious! The chicken paitan had the flavor and richness of the chicken, was a little thick, and intertwined with the thin noodles to really enjoy the flavor. Is the rich tandan noodles made with sansho? I could hear the numbness and it matched the flavor of the meat. I can't explain it in words like this, so please try it once. I would like to come back to eat again!

A few years ago, there was a famous Yu Ramen restaurant in Marutamachi, Kyoto called ``Sawaragi''. "Sawaragi", which has now closed for some reason, is now located in Otsu, Shiga Prefecture with BigPayBack! (ﾉﾟ∀ﾟ)ﾉ The store opened about three years ago in a location not far from the Otsu Prefectural Office. (ФωФ) The entrance may be a little difficult to enter due to the vinyl accordion curtain, but the interior is very stylish and clean. (ﾟ∀ﾟ*) There is an L-shaped counter and small table seats. By the way, there is a coin parking lot nearby. (ФωФ) The menu also includes dried sardines ramen, chicken paitan, lemon ramen, tandan noodles, and chilled ramen. This time I ordered black sardine ramen. The regular Niboshi ramen is salt-based, while the black Niboshi ramen is soy sauce-based, and the soup is made with a gentle soy sauce and the flavor of the Niboshi hits your nose. (ФωФ) The noodles are straight, thin noodles with a nice texture. And simple strong style with pork, green onions, and menma. I think it's very easy to eat even for women because the dried sardines aren't too strong and the flavor of the soy sauce is well balanced. (ﾟ∀ﾟ*) The tandan noodles also have a wonderful sesame flavor and a nice spiciness. Make sure to replace the noodles with special curly noodles. There are two types of dandan noodles: chicken soup dandan noodles and pork soup rich dandan noodles (ФωФ) In any case, you can now enjoy the ramen from Sawaragi in Shiga Prefecture.
