More Comments at Google MapThat was a special experience for me. The ramen in my impression is not the same. The noodles and soup are separate, u can follow the steps in my pictures to eat them. The noodles is quite elastic, and u can ask the owner to turn the sauce into soup at the end. If u don’t understand Japanese, and u dont know how to do it. Just do the same thing as the people around you (cause I didnt understand Japanese either) Overall, that's delicious.
Tsukesoba only restaurant of a unique atmosphere. The master serves noodle and small amount of simple dipping sauce only for first to let you taste the noodle itself, and then serves the main dipping soup. They should have strong confidence on the noodle, and it was so tasty worth trying even you don’t like this kind of strange way of forcing how to eat.
*I don't usually write captions on Google Maps, but I was so impressed that I would appreciate it if you could write one. on the internet the other day ``There is a shop inspired by Seitoku from the machiya era.'' This is a shop that I've been interested in since reading the information. For people born in 1980, it was around the late 1990s to mid-2000s. I was impressed by the tsukemen culture from the dawn to the genesis. I searched for a ramen restaurant that served tsukemen, which was still rare, in a book and went there. What was your favorite store back then? Benten@Takadanobaba Mine source @ Honan Town Shomaru@Nishiogikubo Higashiikebukuro Taishoken@Ikebukuro Seitoku@machiya These were the 5 items. Among them, Machiya Seitoku is unique with its flavorful noodles and shrimp-flavored soup. At that time, I even saw Benten and Seitoku store owners lining up. At the time, I had the impression that the soup stock from animals and dried foods had a strong effect, with a concentration similar to Benten. After moving to Setagaya, I got the impression that the soup itself has become richer. It's a very long time ago, so I may have to correct my memory. I feel that Seitoku during the Machiya era exceeded Benten, which had a lot of fluctuations at the time. *The owner of Benten at that time, Mr. Tanaka, was in the kitchen for only 2 to 3 hours during the day, and after that, the current Toshioka store owner, a large man and a man with glasses, operated the business. I'm sure the owner is a big fan of ramen since it's inspired by Seito's Machiya era. I didn't have a chance to visit because it was only open during the day and it was about an hour and a half from my home. I was intrigued by its reputation, so I took a bus from Ichikawa Station to Kokufudai Station. *About 15 to 20 minutes on foot from Ichikawa Station The store is on the first floor of a beautiful high-rise apartment building. I went there prepared to see a lot of posts online about waiting times of over an hour. It was after 1pm on a weekday, so there was no line outside and only two people waiting inside. Bottled beer (with snacks) Flavored egg tsukemen (250g) Raw egg Pungent taste Order. The inside of the store is quite spacious, and there is plenty of space at the counter, which seats only 6 people. Chilled towels and towels are self-service, and there are plenty of seasonings on the table, including astragalus, salted seaweed, a bottle of citrus, coarsely ground garlic, coarsely ground chili pepper, vinegar, pepper, and Japanese pepper. “How to enjoy dipping soba” There is a tabletop POP called ``Tsukemen'', and the owner's enthusiasm for tsukemen will make you look forward to it. A single operation run by the owner, from customer service to cooking. I think there are similarities with the now-defunct Shomaru, Seitoku, and Toshioka. I feel that I like shops that are managed by the owner alone. Regarding explanations of products provided to customers and explanations of soup distribution, etc. Expectations will further increase with polite and soft-spoken customer service. First of all, bottled beer and snacks were served. I think the generation that is addicted to Benten and Toshio at this point will be impressed. Chili oil on top of strips of pork, menma, and green onions placed on a small white plate. What is surprising is that the tanzaku char siu is not boiled pork, but grilled pork, which requires a lot of work. What is even more surprising is that the bottled beer cups are not the typical thick type, but have a thin shape. As a sign of careful hand washing, there should be no air bubbles on the glass when poured. *If you wash it in the dishwasher, oil will adhere to it and create air bubbles on the inside of the beer glass, which will deteriorate the taste. You can see the owner's commitment to every detail. A few minutes later, noodles and soba soup were served (!). We want you to enjoy the deliciousness of noodles simply with soba soup. First of all, I decided to have a few noodles only as written on the POP. It has a different taste from Nisshin Seifun's Tokuhiryu, which is used at Benten and Toshioka. The thick noodles have a good wheat flavor and go well with soba soup. I was even more impressed when I saw the bowl of soup that was served next. “Kanejo Seito Kiln Henpaku Nagashi Hanrokubei 4.0 Bowl” I have one too, and it's the same one that Benten uses. The noodle bowl is that blue bowl that reminds you of Tomita and Rokurinsha. "Minoyaki Taisuki pattern" The commitment to the equipment is also wonderful. While thinking about this, I dipped the noodles into the soup and slurped them. ...impact. The soup had a strong shrimp aroma, and it brought back memories of Seitoku from the machiya days, and I was moved. When you add egg yolk to the noodles and eat it, it becomes mellow and very delicious. The flavored eggs are soft and half-boiled, and the spiciness comes from the shrimp, which is a nice accent. As POP suggests, sprinkling sea salt and citrus fruits on the noodles will make the noodles even more delicious. Among the green onions, naruto, menma, and chashu in the soup. You will be surprised by the outstanding quality of the chashu. Finally, I asked for soup split. ① Rich soup of animal and seafood ② Refreshing soup made with dried sardines Furthermore ③With yuzu ④No yuzu You can choose from. I asked for a refreshing soup with yuzu. delicious.... It's been a long time since I've been to a restaurant with such high quality, and I completely finished the soup. I was also impressed by the courteous manner in which the owner served each customer. It's a great store that you'll want to visit for the rest of your life.
