He sources the highest quality ingredients and practices his technique until perfected before creating any dish. The results are visible when the visual art piece arrives at your table always delivered with a genuine smile that warms your heart from Miho-san. Having dined at this restaurant for 4 years, I’ve seen the menu evolve and change. Enomoto-san adds new flavor combinations while maintaining some of his signature secrets like the carrots on the dish which were one of my absolute favorite parts of the meal and I would often save them for last. The original is a great introduction to learn where he started from and the roots of when his shop was only 16 seats and the que to enter was 25-30 people long. The Wagyu hambagu is the culmination of his creativity and draws people from far all over the world because of its rich flavor and interactive dining experience which Japan is known for.
