Matsumoto, Nagano, Japan｜Unagi Suppon Yamasei

A top-tier unagi shop, easily able to compete with the best unagi restaurants all over Japan. In terms of price point and quality, a close competitor would probably be Unagi Rin in Shizuoka. The shirayaki here is exceptionally crispy, with all the fat being rendered out. The unagi had a good thickness, and no odorous smell of mud at all. This was the highlight for me; probably the best shirayaki I’ve had after years of eating around Japan. The chef also came out towards the end of service to see us off and make small talk, despite the language barrier, which was nice. Will probably be back to try the suppon course one day, given how good the unagi dishes were.

Amazing meal. Worth the train ride from Nagano just to eat here. The place is as local and small as it gets, maybe seats a total of 16 max. Only 4 tables, so reservations are highly recommended. It was several course of unagi and various unagi parts in different preparations. The first course was a fried taro that was probably one of the best "potato" wedges I've ever eaten. The suppon course was a soup. The owner clearly loves win and has recommendations and a great list. They also have a good nihonshu list. One of the best meals of the trip.

I almost slipped off from the chair after one bite! The best Unagi liver I ever had. It like totally different dish I had before. Of course Unagi itself was superb. Moreover they have a big wine cellar!
