The eel is prepared after ordering, so it takes a while to come out, but the eel was crispy and fragrant and very delicious. It was two tiers heavy.

Fukiyose is the only famous restaurant in Joetsu Takada where you can eat authentic eel. The eel is prepared and slowly grilled after ordering, so it's normal to have to wait at least 30 minutes, but it's a restaurant that's worth the wait because the eel is soft and delicious, with even the plump skin. There are many famous eel restaurants in the Hamamatsu, Maebashi, and Suwa regions, but there are also famous eel restaurants in Niigata Prefecture such as Fukiyo-san in Joetsu, Sanjo, and Arai, so you can enjoy the best eel without having to travel far. Even at Matsu, there are two pieces of eel (one on a separate plate), so it's quite filling.

On my way back from skiing in Shinshu, I came across a loach shop on my way back from around Joetsu and stopped by. Unfortunately, it is currently the season when loaches are not being harvested, so I wasn't able to eat any loach dishes, but I did have the eel ``matsu''. The food must have been prepared, steamed, and charcoal-grilled after receiving the order, and it took more than half an hour from the time the order was placed until the food arrived. Come when you have time. This eel is worth the wait. It's fluffy but crunchy and delicious. I was told that the upper layer of the eel can be grilled in white, so I asked for it to be grilled, and the white grilled eel served with wasabi soy sauce had a special taste and was the best. Next time, I would like to go eat loach during the season.
