For details on the okonomiyaki, see Modan-yaki, a large serving of cabbage, soba noodles topped with 1 bowl of meat, 2 squid, 2 raw eggs, topped with green onions, and a mayonnaise sauce of your own arrangement...Thank you for the meal! On the 15th of October, I had the classic modan-yaki deliciously today. I'm going to take a break for a while, so when will I be able to eat next? 11/2...The long-awaited opening of the shop! ▼The roots of Mihara ware are modern ware It is a custom in Mihara City to call okonomiyaki containing noodles "Modern-yaki." If you look into its roots, you will find that it can be traced to business travelers from large companies such as Teijin and Mitsubishi. In the Kansai region, okonomiyaki with noodles is called ``Modern Yaki,'' and this name seems to have taken root in Mihara. ▼Fukuchan's Miharayaki Typical Hiroshima okonomiyaki consists of ``layers'' consisting of flour dough, cabbage, toppings, noodles, and a finishing egg. However, the Mihara ware here at Fukuchan is a little different. ▼First, let's stir-fry the yakisoba? First, prepare a pile of cabbage, stir-fry vegetables such as tenkasu, green onions, carrots (not red ginger), and noodles (yakisoba or yaki udon) with Worcestershire sauce. ▼ Roll out the water-soluble flour into a ball Once the yakisoba is cooked, roll out the water-soluble flour into a ball, sprinkle plenty of fish powder on it, and place the yakisoba (fried udon) on top. ▼Miharayaki uses chicken offal as an ingredient The photo shows pork belly, but Miharayaki uses chicken offal (liver, gizzard, heart, string, and kumquat) as ingredients. This is an okonomiyaki restaurant in my hometown of Mihara. I'm sure my classmate's mother is doing it? It's been around since I was a child, so it's quite a long time. In the past, the old man here used to deliver by bicycle...I wonder if that service doesn't exist anymore? It may be different now, but back then, I used curly Chinese noodles that you could buy at the supermarket.But it was really delicious.I want to eat it again. Personally, I think it's the best in Mihara 😉👍
