While tasting delicious offal in Tsuyama, I was impressed by the owner's commitment to "deliciousness". As you can see in other reviews, smoking is allowed, there are local regulars, and there are various features, but the food is delicious anyway. Draft beer is the most squeezed. (bottled beer is lager) Homemade Chinese cabbage kimchi for an early snack. Lactic acid fermentation is progressing well, and it has sourness, umami, and a strong spiciness. Yomenakase is crunchy and light offal. I wonder if the texture is close to squid. What surprised me was the original menu, Sujipon. The beef cheek meat is thoroughly drained of blood and then simmered for 4 hours. Served with ginger, lemon, green onion and ponzu sauce. the best. Then hormone udon. The unique flavor of the sauce, the sweetness of the offal (small intestine) fat, and the texture of the cabbage, all of which are impressively delicious. Osaka-style okonomiyaki. It's fluffy and delicious. Actually, I was surprised by the deliciousness of the hormone udon I ate on the first day, so I visited again the next day to investigate other menus and admired the taste. The owner is friendly and talks a lot about delicious things, so I think people who like eating can enjoy it very much.
When I go on a night walk, I have pork balls and dried meat for dinner. I was getting tired of Hiroshima-yaki, but I was addicted to Osaka-yaki, which was waiting for me. Dried meat is also excellent every time.
