Suzaka, Nagano, Japan｜能登忠

The best culinary experience we have had in Japan. The food transmits the japanese soul with delicate elaborations expressing the best out of every ingredient with humility and excellence. This reataurant in a big city would definitively have at least two michelin stars. I cannot express in words how grateful I am I could enjoy this experience.

Thank you for such a wonderful evening - such an incredible culinary experience and wonderful service. Although we unfortunately don’t speak Japanese we were made so welcome and the Notochu team went out of their way to make this a very special evening. Thank you again.

It is often used for auspicious events. The proprietress remembers the customers very well (she probably takes notes about the time of year and what they ate). Every time I go there, I am keenly aware that this is what hospitality means. I think it's wonderful.
