All of Hitonoki's shellfish are wonderful. Strings and creepers come out, and the handling and work is careful. Staying time is approximately 2.3 hours. I think the course is tough in one hour. The chef is always running the food, so if it's crowded it can take some time. If you just want to fill your stomach and eat quickly, it might be a good idea to ask about the crowd status when making a reservation and go when it's empty.
