This is my first aged sushi. The sushi was like nothing I had ever eaten before and it was very delicious. A lot of work was put into each and every sushi item. The sweetness is made with koji instead of sugar, and you can feel the chef's commitment to it. It seems that some of the food has been sitting for two months, but even though it would normally be rotten and unedible, there was no odor at all, and the flavor had changed. Most of the sushi is grilled. However, it wasn't as cooked as the usual grilled sushi, and had just the right amount of flavor. It was fun to listen to the stories as they explained and provided each item one by one. I couldn't choose because everything was delicious, but the flounder, mackerel, kinme, and angel shrimp were especially delicious. I was also happy that they not only served sushi, but also asked me which side I would like. The soy sauce and carefully selected tea were also particularly delicious. *Visit Iwakura store It is a compact shop with only counter seats. Because we only accommodate one group, we didn't have to face other customers, so we were able to eat with peace of mind even during the coronavirus pandemic. I came to the store with just adults, but they said I could bring my children in a stroller. However, it is not spacious, so a smaller stroller may be better. I thought I wouldn't be able to eat sushi at the counter with my kids, so that's a good thing. I would like to visit you again. Thank you.
