Tajimi, Gifu, Japan｜Shinanoya

A udon restaurant in Tajimi. The appearance is very good. The udon is similar to Ise udon, soft and flavorful. China soba is also a specialty, so I tried it as well. I also appreciate that you can eat half size for half the price. The Shina soba had hard kishimen-like noodles and a sweet soup, which was like the first time I had eaten it, and it was also very delicious. The staff was also very polite and warm, and I would like to go there again if I come to Tajimi.

I had hot udon noodles and cold Chinese noodles. The warm udon noodles were thick and soft like Ise udon, but had a chewy texture, and the tsuyu tasted similar to Ise udon. The cold Chinese noodles were hard flat noodles, and this was my first experience of experiencing such hardness. It's a retro shop with a Showa feel, and the staff was very polite and had a pleasant customer service. There was a parking lot next to the store and about 50 meters away.

This item has been around since 1930, and even after more than 90 years, it is still so unique that it is highly regarded. It's amazing how happy I can be just by eating noodles, especially noodles that can only be found at this restaurant. The thickness of the noodles and boiling time are often discussed, but the most important feature is the exquisite temperature range in which they are served. They have carefully laid out the path for diners to jump straight into the joy of noodles. It's been a little over 20 years since I first visited this store, but I still find something new every time I visit.
