You can eat very rare knife cut noodles. The shop is very clean and staff is very kind. Of course, the meal is very tasty. Not so hot.

It used to be located along National Route 2 in Rokko, Nada Ward, Kobe City, but it closed temporarily in 2013. It was a popular restaurant where you could get rare "sword-shaved noodles," so I remember that it was pretty much missed at the time. Sword-shaved noodles are noodles made by thinly shaving a lump of wheat dough with a sword. At the former Fukuryumon, a sophisticated technique of shaving noodles and dropping them into a large pot was demonstrated at the store. Perhaps the enthusiastic encore of fans has reached the owner, who has reopened along the Yamate Main Line, a little north of the previous store. Although I can no longer see the sword-shaved noodles performed at stores, I was still impressed by how delicious they were, just like before. The chewy texture of freshly shaved wheat noodles of various thicknesses and lengths is delightful and endearing. The dishes, which are backed by the knife-shaved noodle technique, are said to be "all handmade," and are known for their authentic craftsmanship. Next time, I'm going to try the specialty ``hot pot'' at the restaurant, which is also available online.

[August 2023] Since then, I've been captivated by Mahler's sword-cut noodles, and the umami of the beef that has been cooked to perfection and the spicy soup are exquisite, and I ended up eating this all the time. Finally, I arrived at a sweet and sour pork set meal other than sword-cut noodles. It's a professional flavor that you can't get at home. I was convinced that whatever I ate was delicious. The set meal comes with a mini-mini size of normal sword-cut noodles, which is really satisfying. I would like to go there at night too. [Added in December 2022] I'm here again. This time, I chose Mahler sword-cut noodles, which is recommended on the menu. The umami of the guinea fowl beef (there are some offal parts?) melted into the soup, and the soup of normal sword-cut noodles, which I thought was delicious, added richness and power up. Ta. As it is, the spiciness is less than it looks, but you can add spiciness and numbness with the tabletop Mahler Jean. It contained carrots, radishes, and crunchy ear ear mushrooms that were boiled until soft. The fried rice set was too much, so I would be happy if I could reduce the amount of noodles. Fried rice is moderately salted. The squeezed greens, which I didn't feel last time, were quite salty, so I wonder if it was just right to mix them with fried rice. [First visit in October 2022] Visited for sword-cut noodles. Since it was my first time, I chose a set of normal sword-cut noodles. It's the first time I've eaten sword-cut noodles, but it doesn't have a chewy texture like a thick wonton, and the thickness is uneven. It was a satisfying texture. The char siu was also seasoned with authentic Chinese flavor (I wonder if the red char siu taste is good), and above all, the soup was quite delicious with a complex taste. Komatsuna, white-haired green onions and yuzu peel were also good accents. The lunch set was full of volume with half fried rice and a small bowl of vegetables. Next is seafood sword-shaving noodles or Mahler sword-shaving noodles. All of the single dishes looked delicious, so it's a must-try restaurant that you'll want to visit at night.
