I went to Seimando, a famous tonkatsu restaurant that I was told about by a person at the Nagano branch. Reservations are required, but since it was a weekday, I was able to make a reservation on the same day without any problems. However, it takes time to prepare, so early reservations are essential. In my case, I called the store at 10:30 and asked for a 3cm cutlet, but they told me to come to the store at 12:00. Tonkatsu takes a lot of time and effort😀 So, go when you have time. The tonkatsu made by the humble and kind owner was extremely soft, fatty and delicious! In order to enjoy the natural taste of the meat, the tonkatsu is not seasoned and the batter is extremely thin. It was the most delicious tonkatsu I've ever eaten, without any extra cost. The meat has a strong taste, so you don't have to add tonkatsu sauce! Adding a little salt brings out the flavor of the meat even more. This time, it seems that the owner couldn't make the tonkatsu that he was satisfied with, so he gave us a special 5cm cutlet😊 As a chef, it's great that you don't serve food that you don't agree with. Chawanmushi is extremely delicious. The owner humbly said that he wasn't confident because he wasn't a professional, but on the other hand, even though he wasn't a professional, the quality was amazing (lol) Please try it. This is a store you should definitely visit when you go to Zenkoji Temple. It's a bit of a luxurious lunch, but it's very satisfying.
