However, it seems that you can choose the hardness of the noodles and the amount of garlic you like, but the staff never asks you to do so! I think it would be nice if they could explain the store's system to first-timers... Overall, this may not be a problem for regulars, but for first-timers, the restaurant was a little lacking in friendliness.
