Finally, the dashi soup with soba water warms your stomach and makes you feel at peace. Authentic soba restaurant with locally produced and locally consumed Hitachiaki soba. In Hitachiota City, there is a brand of soba called Hitachiaki Soba, and our restaurant also uses this soba. ▪️Cooking/Taste Select the ``Limited Steamer'', which is limited to 20 meals a day and costs 1,300 yen including tax. We use locally-grown, hand-harvested, sun-dried Hitachiaki soba noodles from Kanasago, Hitachiota City. It is said that the flour is ground in a stone mill at a ratio of 10 parts soba to 1 part wheat flour. What's interesting about bamboo steamer is that there are three plates of soba inside the soba, and by making them into plates, you can fully enjoy the unique taste of soba. In addition, ``water'' and ``salt'' are prepared separately, something I have never seen at other soba restaurants, apparently because they want you to enjoy the taste of the soba itself. It is said that ``mizu soba'' is eaten by soaking it in water, and it certainly feels like soaking it in water brings out the flavor of the soba. Of course, you can eat it as is, but the taste of soba stands out, and I had the luxury of eating locally made soba as is. That said, the soup is of high quality, with a good bonito stock, fresh wasabi stock, and grated daikon radish. This time I visited in May, but if you visit during the new soba season (November), you might be able to enjoy the best soba. ▪️Service/Atmosphere The shop is located at the back of a side street near a sports-related facility, and there is a parking lot that can accommodate multiple cars. This is a detached restaurant, and you enter the restaurant through a lush garden. The interior was very nice, with an old folk house style, but also a modern feel.
Limited Seiro. It was new soba. Soak in water first and eat. You can enjoy the flavor of soba itself. Then salt. It was pale pink, so maybe Himalayan rock salt. Salty and rustic taste of soba. Finally, with the royal road soba soup. It is one of the few restaurants where you can eat with water and salt. The soba noodles are also delicate and beautiful, but the soba noodles that were mixed in a thin plate were impressive.
