If the beef is boiled for a short time, the gyudon will be slightly cooked and pale in color, giving the meat a somewhat wild flavor. If you boil it for too long, the fat tends to run out and it becomes dry. It tends to be late at night when the number of customers is small. Well, I don't want it to be dry, so I blend it with moderately fresh beef, so there are times when I can get different flavors of meat blended together in one beef bowl. Then strain the sauce. The sauce will need to be strained at a specific time, as the cooked meat scraps and blood will turn into powder and settle and become cloudy. There are many people who like it right after it's dripping, but I prefer it when it's a bit muddy. I ate at 8am today... It's so crowded...
