Tajimi, Gifu, Japan｜Mizuno

I had the soba and shrimp/kabocha tempura, along with a slice of French Basque Cheesecake for dessert which, I very much enjoyed. The Soba was very refreshing and had a very distinct flavor. The tempura was delightful and melted in my mouth, which tasted amazing with the soba, and was very different from others I’ve ever eaten. Specifically, the soba たれ had a very rich flavor which perfectly balanced out with the lightness of the tempura. Overall, I was very impressed with the quality and delicacy of everything and look forward to returning.

I had the Sudachi Soba. Since it was cold, the noodles were better cooked and delicious ☺️ You can add soba hot water here. The atmosphere of the store was nice, and the staff were very calm and kind.

Why is such a delicious soba restaurant located in the middle of a residential area? Really highly recommended! The inside of the shop is clean and you can enjoy soba in a very calm environment. The clerk was also very polite, friendly, and kind. The tempura is perfectly crispy and juicy on the inside. The soba noodles were also fragrant and chewy. Above all, I especially like the soba soup that I had to refill for the first time. This is a very valuable soba restaurant where you can enjoy soba and its aftertaste in a slow and calm atmosphere.
