Founded in 1989, Takada Hassho is a Japanese restaurant that is representative of Gifu. It is one of the best Japanese restaurants in Gifu, and is known for having produced the chefs of many famous restaurants, including Seizan in Mita and Otake in Nishi-Azabu. There are several types of courses, but this time, the second from the bottom, we booked the 16,500 yen course and visited on the day. First of all, the appetizer appears, and the white fish topped with mullet roe is exquisite. At this point, the shift changed from beer to Japan. It goes well with Japanese sake. Sashimi is made with bubble soy sauce and grated soy sauce. Awa soy sauce is apparently a mixture of soy sauce and gelatin, and its light texture goes well with sashimi, especially squid and shrimp. Bluefin tuna is fatty, so I like grated soy sauce. The bowl of egg tofu and clams is a dish with an irresistible stickiness from the egg tofu, and the gentle flavor of the clams. On top of the fugu nigiri is the skin marinated with ponzu sauce, which is refreshing and delicious. After that, the amazing dishes continue, but the highlight is the favorite dish, ``Nore Sore''. The season ends in April, so how many more times can I eat it? The unique texture and taste are irresistible. The meal is green lettuce chazuke, which has a nice scent that tickles your nostrils. The rice is delicious and goes down smoothly even when you're full. I like this. Finally, we finished with fruit and ice cream as dessert. It was perfect for refreshing the palate. The flavors throughout the dish were neither strong nor weak, and the flavors were exquisitely calculated.
