Singapore｜Wan Xing Mala Hotpot

Right up till the cusp of the 2000s, Chinese mala stir-fry was but a blip in our local culinary landscape. Since then, however, this phenomenon has exploded to become a staple in food courts and coffee shops throughout Singapore. As can be expected, migrant cuisines do evolve over time to adapt to local palates. This, Wan Xing has done well, turning down the heat so that the flavours and aromas of spices aren’t dominated by the anxiety of overwhelming heat or the wildly lip-numbing that I experienced with some other similar outfits. We picked over 20 different plant-based items and vegetables, throwing in some sausage, luncheon meat and belly pork for good measure. Service was fast considering the modest crowd in a Tuesday evening. Air conditioning was just comfortable enough to keep us cool without chilling our stir-fry. I did, however, break out in a mild sweat midway through the meal. The range of drinks offered was a tad limited but that didn’t bother me at all. My party of five spent $80, which included 5 servings of white rice. While I haven’t tried their other dishes, I shall be back to sample them with friends or family.

Ordered medium spicy level and the spiciness was ok. Not very '麻' in my opinion but overall an enjoyable meal! Garlic taste was on the stronger side compared to regular mala chains. Paid $15.10 for this portion including rice.

Update: Have decided to eat here again. But this ordering less meat. The taste is still the same, which means that there is consistency in the cooking! I went during dinner time and the service is quick too. Although there is a queue for payment, the staff managed to efficiently process orders. The dining experience is still great! ————————————————————————— Visited the restaurant during dinner time. Although it was pretty crowded there were still table available. You get to choose the food items from the fridge and the staff will weigh the items to calculate the price. I am impressed that the shop has vacuum packed the meat items to preserve freshness and ensure hygiene. Overall, the taste is great!
